Jason Williams and Chris Mullenix have spent the last year working on a concept to bring the monsters home. Theirs is a unique business model. It’s a mash-up, which is part restaurant, part commissary for a growing fleet of monster-themed food trucks.
Occupying the former Caribbean Mingles location across from the Jefferson Hotel, the rambling three-floor adjoining buildings are broken into a maze of bars and dining areas, perfect for the multi-themed operation. The decor is neo-Goth, with dark walls, old church chandeliers, and lots of red velvet.
Four monsters, and their dining themes share the space. Plans are being finalized for each to take their show on the road as food trucks.
CHUPACABRA
The most recognizable of the group, Chupacabra has been serving solid Tex-Mex fare from a popular food truck for the past three years and will expand on that menu.
SWEET FANG
With a mascot described as “Beyoncé Bat,” the Sweet Fang monster pulls together coffee from Lamplighter with baked goods from Flour Garden, Lucille’s and gluten-free experts, 3 Fellers, in addition to offering a full-service smoothie bar.
KAPPA SUSHI
Named after Japanese river monsters, hopefully Kappa Sushi won’t drown its victims, but only delight them with its mastery of raw fish. Oc- cupying an upstairs bar, where rumors have suggested monsters dancing in cages, sushi will be prepared by a chef with 27 years of experience, including 10 years in New York City sushi bars as well as two in Japan.
KILLER PIZZA
Killer Pizza will take advantage of owner Jason Williams’ experience slinging pies. Its monster is Slice, a Ninja-inspired slice of pizza, complete with throwing star and sword. Williams, who owned many of the local CiCi’s Pizza franchises, will be following more of the Extreme Pizza model than CiCi’s all-you-can-eat fare. With plans for Gospel Sundays, dinner theater, and “open your mind” nights, this eclectic venue is surely bringing some new things to a burgeoning Richmond dining and food truck landscape. The Lair is work- ing with Grow RVA and Feed RVA on a variety of charity and food co-op ideas, and from the start, promises a 4 percent return of profits to charity.
